Butterscotch and Chocolate Chip Banana Bread

One of my favorite pastimes is baking. Over the weekend, I spent a part of the day baking banana bread. It is a household favorite of my family (side note: I am not a fan of banana bread). Even though I don’t eat banana bread, I do love to bake it.

Is there anyone that likes to bake or cook food for others, even though it might be a dish you don’t particularly like?

What I like best about baking this particular bread is that there are countless variations that can be created from slightly adjusting the recipe of this simple baked good. The variations of banana bread that I have made range from me using walnuts, to chocolate chips, and even coconut flakes (which is a favorite of my mom’s). Each time I make this bread for events, I always receive positive feedback.

The recipe that I will be providing today has an added touch of extra sweetness with the butterscotch and chocolate chips.

  • 2 cups flour
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3-4 medium, overripe bananas
  • 2 eggs
  • 1/2 tsp vanilla extract
  • Handful to 1/2 cup of a mixture of butterscotch, milk and white chocolate chips
  • Optional: 1/2-1 cup of walnuts or almonds


  1. Preheat the oven to 350°F
  2. In a large bowl or stand mixer add the flour, white sugar, light brown sugar, baking powder, salt, and baking soda
  3. Mash the bananas in a small bowl by hand or use a blender
  4. Pour the banana in the large bowl or stand mixer
  5. Add the eggs and vanilla extract
  6. Mix the ingredients all together with a large spoon or an electric mixer, until the flour is evenly mixed
  7. Stir in the chips and the nuts
  8. Spray or butter the bottom and sides of a loaf pan
  9. Pour the batter into the pan and place in the middle of the oven
  10. Bake for one hour or until a toothpick or knife placed into the middle of the bread comes out clean. Let it cool down before removing it from the pan.


  • For a smoother texture, blend the bananas
  • For a more moist banana bread, slightly reduce the amount of flour and add a few teaspoons of milk or water
  • The sugar can be adjusted to your liking
  • The chips can just be sprinkled on top for garnish instead of being stirred into the batter
  • For a healthier variation, use 1/2 cup honey in place of the sugar
